For example if I've done a search on a specific domain and then want to sort by department (which I've added as a custom field).

Unfortunately due to some limitations in libraries we use, support for non-ANSI characters is not great. But I will investigate this issue shortly.

Yes, I know that I can use the search/filter function for the custom fields, but the Swedish letters å, ä and ö aren't recognized, so it limits the search function in these fields.

Unfortunately because of the way the custom fields are stored it is not possible to use them for sorting.
However, you can filter the list by custom field values, in the Search/Filter view.
