How do I setup MLK so that messages that are sent without a group name in the subject get forwarded to a group of my choosing?

There is no "default group" for forwarding of members message at this time.
However you can use Outlook rules to move those messages to a folder and then use "Folder Processing Tasks" in MLK (View > Options, Email Processing) to forward all those messages to a particular group.
