When in preview mode and noting I have to change timing on frames, do I have return to the project or can it be done in preview mode. Also if I go back to the project do I have to go back to the beginning mode in preview or can I take up where I left off.

Return to Project then go to VIEW then Options and untick Always start Preview from first frame. Then you can start from where you left off.
